French Toast with Marion Berry Reduction

by Frou Frou Feliz

This is a custard style French Toast, cooked over gentle flame to perfection and draped with a honey and lemon/lime zest spiked Marion Berry Reduction. Recipe later on today.

Ingredients:
6-8 French Bread diagonal slices
4 large organic eggs
2 teaspoons madagascar bourbon vanilla
3 tablespoons organic sugar
1/2 teaspoon salt
1/2 cup whole milk

Marion Berry Reduction
Beat eggs, vanilla, sugar, salt until blended in a large, wide bowl. Incorporate milk. Lay French bread slices in egg mixture and let them soak. I prefer to let the egg mixture soak the bread completely. This makes the eventual French Toast more custardy.

Heat up a heavy skillet on medium-low. Add some butter so the soaked slices don't stick. Carefully remove soaked slices one by one and place on the skillet. Be sure the flame is low enough. It's easy to burn this recipe due to the sugar content. cook 4 minutes each side. Cover skillet. Lower heat will allow the French toast to cook all the way through without burning.

Arrange French Toast on plates. Pour Marion Berry Reduction over them. Add a dollop of butter if you like and some honey.
