Indulgent Belgian Waffles

This recipe is slightly different than the average.  We use top quality ingredients such as bourban vanilla and high grade butter that's browned first before adding to the batter. It makes a much richer waffle.



Ingedients:
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon bourbon vanilla
  • 1 1/4 cup change to whole milk
  • 1 cup vanilla yogurt
  • 1 stick of butter, 1/2 cup, browned
  • 3 large eggs
  • Vegetable oil for waffle iron
  • Special equipment: a waffle iron (preferably Belgian-style)
  • Toppings: creme fraiche, whipped cream, fruit, maple syrup, butter...

Process:
Warm waffle maker.
Combine flour, sugar, baking powder, baking soda, and salt in a large bowl. Set aside.  In a second bowl, whisk together milk, browned butter, and eggs in a bowl, then whisk into flour mixture until just combined.

Bruth the waffle iron lightly with vegetable oil and pour a slightly rounded 1/2 cup of batter into each waffle mold (see cooks' note, below). Cook waffles according to manufacturer's instructions until golden and cooked through, about 3 minutes. Transfer to plat.

yield: Makes 8-10 waffles
