Browned Butter Scottish Shortbread Cookies

Simple, rich and delectable.  Browned butter and bourbon vanilla make this classic recipe pop with flavor and richness.





   Ingredients:

1 cup salted butter
3/4 cup raw organic sugar
1/2 teaspoon bourbon vanilla
2 1/4 cups all purpose or pastry flour

 Brown butter on stovetop on low heat for about 10 minutes until it has a rich aroma and the color has changed to a dark amber.

Let the brown butter cool a bit then poor into a bowl containing the sugar and vanilla. Combine. Stir into flour and mix to form dough.

Take heaping teaspoon sized pieces of shortbread dough and roll into a ball then flattening them slightly. Place flatten balls into a baking dish. Prick with fork tines if you desire.

Bake in 375-degree oven 25 minutes. Cut along markings while still hot. Cool in pan, then turn out and sprinkle with a light dusting of confectioner's sugar if serving right away, or store in an airtight tin.
